Many farmhouse style beers are using ginger to give the beer some more complexity. Ginger works well with sweet or bitter orange peel, cinnamon, nutmeg, and coriander. For a subtle ginger flavor, us 1/4 - 1 oz. in the boil or secondary fermenter. For a pronounced ginger character, use 2 - 4 oz.
